Our Nef Saint-Louis range consists of three wines
Our most popular Range is composed of three wine of sands: The white (Blanc), which will successfully accompany your shells, fish and other seafoods, the gray (Gris de Gris), the red (Rouge), which will agreeably accompany your meats and cheeses of character.
These wines are declined in two traditional presentations of 50cl and 75cl. Both are also proposed in two other presentations as you will be able to see in the Illustrated Series (Flamingos Series).
The white
A white wine of great finesse with a golden robe
Service
As an aperitif: ideal served chilled or in kir.
Meals: shellfish, seafood, grilled fish.
Serving temperature: around 10 ° C.
Characteristics
Color: yellow color with pale gold reflections.
Nose: powerful with floral and citrus aromas.
Palate: attack with a lot of volume, strong smoothness, lively finish.

Wine making
Since 2012, wines are made according to organic charter with limiting inputs to keep up the natural qualities of the grapes. Mechanical harvesting. Protection of grapes during transport to the winery. Receiving the grapes in a drainer stainless conquet to separate as soon as possible and limit oxidation juice. Extraction of musts by pneumatic press with maceration in atmosphere (nitrogen) and controlled temperature. Settling after cooling to 10 ° C. Filtration of lees after maceration and reincorporation of the filtrate for fermentation. Systematic addition of yeast to clear juice with selected yeasts. Fermentation regulated between 14 and 18 ° C.
Breeding
Ageing on lees with regular stirring. Rapid extraction with CO2. Tangential filtration. Bottled and stored in the cellar at 14 ° C until shipment.

Chardonnay
It will go well with your fish and white meats, but also your goat or blue cheese.

- Color: yellow color with pale gold reflections.
Nose: powerful pineapple, meringue cookie or candy. Palate: attack with a lot of volume, strong smoothness, finish on notes of “toffee”.
Wine making
We keep the natural qualities of the grapes as much as possible: Mechanical harvest with destemmer, protection of the grapes during transport to the cellar, reception of the harvest in a stainless steel drip tray to separate the juices as quickly as possible and limit oxidation. Extraction of musts by pneumatic press with maceration under controlled atmosphere (nitrogen) and temperature. Settling after refrigeration at 10 ° C. Filtration of the lees after maceration and reincorporation of the filtrate for fermentation. Systematic yeasting on clear juice with selected yeasts. Fermentation regulated between 14 and 18 ° C.
Breeding

Red wine

Service
The red wine is distinguished by its suppleness, an unexpected freshness, an exceptional delicate aroma between body and finesse. It will perfectly accompany red meat and highlight the subtle tastes of the best cheeses. Meal: grilled red meats or in sauce, strong cheeses. Serving temperature: young from 12 to 14 ° C, after aging from 15 to 18 ° C.
Characteristics
Color: deep ruby color.
Nose: red fruits and toast.
Palate: well balanced, structured wine, without excess with long sap. Aromas of red fruits, spices and toast.
Grape varieties
Merlot – Syrah
Vinification
Plot selection: the Syrah plot was planted in 1969 with a yield of 50 hl / ha, Merlot in 1975. Sorting of the harvest, total destemming and light crushing. Semi-carbonic maceration. Twice-daily pumping over to increase tannic extraction and color. Three complete shedding during fermentation to round off the tannins. Long maceration.
