Grande Réserve wine
An olfactory intensity underlined by the finesse and subtlety of its aromas
This special 100% Cabernet Sauvignon vintage, with a deep robe, presents an olfactory intensity underlined by the finesse and subtlety of its vanilla aromas of ripe fruit, candied and spices. Well balanced, elegant, velvety, structured without excess with a fairly long sap, it can be tasted young. But the secondary bouquet will only be expressed after aging in the dark of a cellar.

Grapes varieties

Vinification
Since the 2012 vintage, the wines have been vinified according to the organic charter, with limited inputs, in particular sulphites, to preserve the natural qualities of the grapes as much as possible. Selection on the plot, sorting of the harvest, total destemming and light crushing. Semi-carbonic maceration with temperature control: juice at 24 ° C and marc at 29 ° C. Reassembly by sprinkling and shedding for burial of the marc cap, to increase tannic extraction, color and tannin coating. Long maceration between 15 days and 1 month.
Elevage
Racking with aeration before malolactic fermentation. Aging for 12 months in French oak barrels, from Allier, for 50% of the cuvée. Bottled then stored in the cellars at 14 ° C until shipment.

Vinification
