A fruity wine with aromas of white fruits
“Elles”… Brigitte and Nathalie are happy to introduce you to their new gris-gris cuvée, a specialty of Camargue sand wines, with a pale pink tunic embellished with beautiful mauve reflections, with a nose of flowers, wild strawberries, lingonberry, well balanced on the palate, where roundness and liveliness go hand in hand to come alongside flavors of exotic fruits and raspberries. Gris de Gris, a specialty of IGP SABLE DE CAMARGUE, is distinguished by its luminous salmon-apricot color.

Vinification
Since the 2012 vintage, the wines have been vinified according to the organic charter, with limited inputs, in particular sulphites, to preserve the natural qualities of the grapes as much as possible. Mechanical harvest with ginner. Protection of the grape during transport to the cellar. Reception of the harvest in a stainless steel drip tray to separate the juices as quickly as possible and limit oxidation. Extraction of musts by pneumatic press with maceration under controlled atmosphere (nitrogen) and temperature. Settling after refrigeration at 10 ° C. Filtration of the lees after maceration and reincorporation of the filtrate for fermentation. Systematic yeasting on clear juice with selected yeasts. Fermentation regulated between 14 and 18 ° C.
Breeding
Aging on lees with regular stirring, to bring roundness and fat. No malolactic fermentation to preserve the liveliness and freshness of the aromas. Rapid withdrawal under CO2. Tangential filtration. Bottled then stored in the cellars at 14 ° C until shipment.
